Betty's nutroll


I tried some new things in baking this year too. Prompted by sis-in-law Stacy's making of Betty's famous nut roll, I decided to try it as well. HUGE shoes to fill trying to get close to our mother in law's amazing cooking and baking skills! She is no longer with us, so it seemed even more important to try to duplicate it. Bert seemed pleased that I attempted it and said it tasted just like he remembered. I do need to work on my rolling skills because there were some inconsistancies in nut to dough ratios!

In an effort to eat healthier, I've finally listened to the experts and have been eating breakfast. I got bored with oatmeal every day, so I've been experimenting with different egg dishes-mostly because I just use whatever happens to be in the fridge at the time. Earlier this week I came up with one that is good enough to share. I'm mostly an 'eyeball 'cook (ie don't measure) when I'm experimenting but, to the best of my recollection, here are the ingredients:

Spinach Feta Omelet for 1
1/4 c. egg beaters (or 2 real eggs)
2 c. fresh spinach
handful of chopped onions
1/2 roasted red pepper, chopped (the jar kind)
a few crumbles of feta
Mrs Dash lemon pepper blend to taste

Coat small pan with Pam olive oil cooking spray. Saute onion, red pepper and spinach until all are soft and wilted. Add egg beaters and cook until set. sprinkle feta and let melt. When omelet is ready, fold in half onto a plate, season and enjoy!

Re-purposed pins

I'm finally getting around to making my Christmas thank you cards and digging around my mess of a craft room inspired this round of cards. These are really fun because I've taken all my forms of creativity and put it on a card. The 3D pieces are leftover art pins I made that didn't sell as pins. Too pretty to throw away, they now have a new life as an art card!

Because I'm a freak and can't make a card exactly the same more than once, here are 3 examples of my birthday gift thank you notes

Reading is sexy-my bookmark says so!


Inspired by a piece of 'flair' from my Facebook page, that just happened to be the right size for a 1" round SU! punch when printed out, I made these "Reading is Sexy" bookmarks for all my girlfriends. Jumbo clips bought at Walmart, SU! punches (1" round, 1 1/4" round, flower), embellished with black and white checked ribbon.

A Pony Journal

My friend Julie finally got a pony for Christmas (it's just a partial and temporary lease for now, but it's still a horse!). Since she is one of the most consistent journalers I know, I made her a horsie journal to document her time with her pony. Blank journal bought at Borders, embellished with scrapbooking letters, fancy ornament hanger, Stampin' Up! tag punch and real cancelled stamp with a horse and rider.

Brand new blog
